The difference between pectin gelatin and carrageenan

These three kinds of glue are extracted from different substances. Pectin is mainly extracted from plant fruits, gelatin is mainly extracted from animal skin and bones, and carrageenan is extracted from Eucheuma, staghorn, cauliflower and so on.

Gelatin is mainly extracted from animal skin and bones. It is an edible glue soluble in hot water, glycerol and acetic acid. The gilding tablets we usually see on the market belong to gelatin.

Carrageenan is extracted from Eucheuma, staghorn and cauliflower. It can replace agar, gelatin and pectin to make jelly. The jelly made from it is not flexible enough and easy to melt, so it is now used as gel for jelly.
