Keep the cherries in the refrigerator

Note: the storage of cherry needs to be dry and low temperature. The cherry is soaked in the fresh-keeping solution, washed clean with water, drained and put into the pre prepared fresh-keeping solution. The amount of cherry added is about 60% of the weight of the fresh-keeping solution. It can be sweetened after one to four months storage under natural conditions. Remove and drain the cherry from the preservative. Heat and concentrate the preservative solution until the sugar concentration reaches 28%. Soak the cherry in it for one day and take it out. Repeat 2-3 times to make the sugar concentration of the preservative solution reach about 38%.

The cherry processed by this method has good aroma and taste. In addition, after removing the stem and core of the cherry, it can be soaked in the concentrated fresh-keeping solution. After repeated 2-3 times, the sugar concentration of the preservative solution reached about 45%. Cherry processed in this way is very popular as an ingredient of ice cream or yogurt.

How to prepare preservative solution:

Preservative solution is a kind of acid sugar solution with appropriate preservatives. Sucrose, glucose or fructose can be used as sugar, and its concentration is appropriate when the osmotic pressure of the solution is balanced with that of the cherry. In this way, cherry can avoid swelling, cracking or shrinkage deformation, and maintain its original texture. The average sugar content of cherry is 12-16%, and the sugar concentration of preservation solution is 15-20%.

What should be paid attention to in fresh cherry preservation

1. Fresh cherries can generally be stored for about 2 days at room temperature, but they can be stored for 5 days if they are put in the refrigerator. In winter, the time can be longer. However, cherries should be eaten as soon as possible while they are fresh. If you can't eat them all at once, you'd better wash them as much as you can. If you want to store cherries, don't wash them first, so as not to damage the protective barrier of cherries.

2. Do not use plastic bags or plastic boxes to hold cherries, because poor air permeability, easy to cause cherry decay. In addition, the fruit stem can not be removed, and it is easy to be damaged if the fruit stem is removed.
