2. For the iron pot used for food frying, raw iron pot should be selected. The heat transfer of pig iron pan is generally slower than that of cooked iron pan, and the heat dissipation rate is higher than that of cooked iron pan. Therefore, when frying food, pig iron pan is less easy to paste than cooked iron pan, and the oil temperature is not easy to be too high. Too high oil temperature will lead to food coking.

3. The surface of the pig iron pot has low smoothness and fine cracks. If you fry food for a long time, a layer of carbide film (pot scale) and oil film will be formed on the surface, which can prevent the oil temperature from being too high on the one hand and rust on the other hand. The surface of cooked iron pot is smooth. Unless the pot is fried, it is generally difficult to form pot scale

Raw iron pot is melted and cast with gray iron, while cooked iron pot is forged with cooked iron. The difference in manufacture leads to the different functions of the two pots. We can't comment on which is good or bad. It is mainly evaluated according to the needs of cooking. It's good to fry some food in a raw pot and cook some food in a raw pot.
