What is steamer cake?

Steamed cake is a local snack in Guanzhong area. The quality steamed in pottery steamer is the best. Practice of steamer cake

Raw materials: the raw materials of steamer cake are 10 kg of jiangmi (traditionally Wuxi glutinous rice), 3 kg of jujube (Lingbao Maotou jujube is the best), 30 kg of water and an appropriate amount of raisins.

The proportion is 10kg of rice per pot and 3kg of jujube. There are strict requirements for soaking rice, steaming, adding water and fire work.

Practice:

A bubble of rice, rice is glutinous rice, water is clear water, soak for a long time, soak the rice heart, wash it several times, remove the floating foam and drain the water.

In the second steamer, jujube and raisins are first, then rice. One layer is paved one by one, more than one layer. Finally, a layer of red jujube (honey jujube) and raisins are paved on top.

Three fire skill is generally steamed over high fire for about two hours, then steamed over low fire for five or six hours.

Fourth, add water. First, add warm water to the jujube rice in the steamer to blend the jujube rice. Second, add cold water to the large pot from the vent to make the hot gas generated in the pot rush into the steamer.

When steaming steamer cake, put the steamer on a large pot, add water to the pot, and then spread the soaked glutinous rice and red dates at the bottom of the steamer. Specifically, one layer of red jujube should be paved first, and then one layer of glutinous rice. In this way, one layer is sandwiched with one layer, and a total of seven layers (three layers of rice and four layers of jujube) should be paved. After paving the back cover, put on the wet cloth and pot cover. Boil over high heat, take a wet cloth after steaming, sprinkle with water, sprinkle water repeatedly for three times, and finally simmer and steam over a slow fire. It can be steamed after five or six hours.
