How to play with eggplant?

Method:

5. Heat wok, pour in 1 / 2 cup oil, heat oil temperature 40%, fry eggplant strips over low heat until soft, drain oil.

6. Leave proper bottom oil in the original pan and heat it to 50%. Pour in shredded meat and stir fry until it is broken. Drain the oil.

7. Heat the oil in a wok to 50%. Add onion, ginger, minced garlic and chopped pepper.

8. Add soy sauce, add a little rice wine and stir fry until fragrant.

9. Add shredded carrots and stir fry until they are unripe.

10. Pour in shredded meat and eggplant, add soy sauce and sugar.

11. Add some pepper powder.

12. Pour in shredded green pepper and stir well over high heat. Sprinkle red pepper ring and garlic slices in and stir well before leaving the pot. Then add some chicken essence to taste.
