Sichuan noodles

1. Take chopped green onion, ginger and garlic, chopped garlic, minced fat and lean meat. I use this kind of sprout which is broken rice. If it's the whole sprout, first cut it.

2. After the pot is heated, pour in the oil, put in the onion, ginger and garlic, burst out the fragrance, put in the minced meat, stir fry until completely discolored, cook in the cooking wine, put in the rice sprouts, a small amount of sugar, stir fry for two minutes on a low heat.

3. Mix the raw soy sauce, sugar and vinegar in the proportion of 4:1:1, add the same amount of cold water and mix evenly, pour into the pot and boil for about 3 minutes over medium and small heat, then half a bowl of soy sauce will be obtained.

4. Chop raw garlic, fry peanuts and mash properly.

5. In step 4, mash the garlic and peanuts into the soy sauce in step 3, then add a spoonful of secret chili oil and mix well. Cut scallion leaves into flowers.

6. Cook the fresh cut noodles for 8 minutes, drain and pour into a large bowl. Mix with pepper oil and shake well until it doesn't stick.

7. Wash, tear, scald and remove the whole dish.

8. Pour the sauce of step 5 on the noodles, then spread a layer of abalone, mix well. You can choose seasonal vegetables as you like.
