Nanjing beef pot stickers is one of the ten special snacks in Nanjing. It's juicy and salty. It's suitable to teach you how to make beef pot stickers at home.
How to make beef pot stickers:
1. Remove the beef from the fascia and chop it to the end. Chop the ginger and onion into the end. Put them into the basin together. Add 250g soy sauce, refined salt, monosodium glutamate, pepper, sesame oil and water and mix them to make a stuffing for use.
2. Put the flour on the chopping board, add 300g of refined salt and hot water (above 70 ℃), mix the flour evenly, spread out and cool it (i.e. scalding and flour method), and then knead until it is smooth, which is the soup noodle skin.
3. Take the dough strip and roll it into 60 pieces of preparation. Use a rolling pin to roll it into a thick skin with a thin edge in the middle. Wrap it into the filling center, and then knead it into a pleated dumpling.
4. Put the dumplings in a pan that has been oiled and heated. Fry for half a minute, then add water to 1 / 3 of the height of the dumplings. Cover and fry until the dumplings are cooked. The bottom is golden and burnt.
