How to make crisp, tender, oily, salty and sweet tofu with Scallion

Main ingredients: a piece of tofu and a piece of green onion. Make sure that the amount of cut green onion should account for at least one third or half of the tofu. 1. Boil a pot of water, depending on the amount of tofu, sprinkle appropriate amount of salt (the cooked tofu is slightly salty), add more than ten Chinese prickly ash, and cook the tofu for about 7 or 8 minutes

2. Cut the tofu into 3 cm long, 1.5 cm wide and 1 cm thick slices. Cut the scallion with the same length as tofu

3. Add more oil into the pan

4. Add the bean curd and scallion, and don't fry it too low. If the fire is too low, it will make the bean curd too dry and lose the flavor of crispy outside and soft inside

5. The key point is to fry the scallion all around

6. Turn over the tofu and scallion at any time, and fry them yellow and fragrant all around

7. Depending on the amount of bean curd, add a teaspoon of oyster sauce (or oyster sauce) with a teaspoon of water, then add half a teaspoon of soy sauce (my gift of last year's Thanksgiving season, Haitian first road soy sauce), and then add a proper amount of crushed rock sugar

8. Cover the pan and simmer until the soup is thick

9. Turn over the heat, add a few drops of sesame oil, and then turn over slightly

10. When out of the pot, sprinkle a few chopped chives to enhance flavor and color
