get ready:

1. Pick out the mud line from the second section of the shrimp shell with a toothpick

2. Cut off the shrimp whiskers, open the back with scissors, wash and dry the shrimp

3. Prepare several slices of ginger, and cut some shredded ginger. Wash and cut the scallion into sections. Place the soy sauce, cooking wine and sugar in a bowl

Methods:

1. Put proper amount of oil in the pot and heat it with fire

2. Add ginger and scallion

3. Deep fry until the ginger slices shrink and the scallions become deeper. Remove the scallion and ginger and discard them

4. Pour in the prawns

5. Pour the seasoning in a bowl and stir fry until half of the shrimp turns red

6. Add shredded ginger

7. Add ketchup. I haven't measured the ketchup, because I can season it myself. If it's not enough, I can add some more. It's estimated to be 2-3 tbsp

8. Stir fry, wait until all the shrimps change color, cover the pot and cook for a while, about 1 minute
