Sichuan Mapo Tofu

1. Dice the tender tofu and the dried peppers. Mix 1 / 2 tbsp of raw meal with 3 tbsp of clear water to make the water.

2 boil half a pot of water, add 1 tbsp salt, blanch the tofu cubes in boiling water for 30 seconds, remove and drain.

3 take an empty bowl, add all the ingredients of the spicy sauce and mix well, then make it into the spicy sauce for use.

Heat 3 tbsp oil, stir fry ginger and dried chilli over low heat, then stir fry the minced beef until the meat changes color.

5 pour in the spicy sauce, stir fry with the minced beef until it boils.

6 pour in the tender tofu and mix gently. Pour in the flour and water to thicken the sauce. Sprinkle 1 / 2 tbsp of pepper powder on top. Serve.

Others: if you want to be quick and convenient, you can burn it with supermarket materials.

Tips:

1. After the tofu is diced, it should be blanched in the boiling water with salt to remove the fishy smell of the bean and make the tofu not fragile and rotten when cooking.

2. When slicing tofu, flying water and cooking, try to keep the knife steady and light, so as to avoid the tofu crumbling and not forming.

3. Before starting the pot, thicken the soup with raw meal water to make it thick and spicy.

4. Use pepper powder to adjust the hemp taste, do not use pepper particles, otherwise, when eating tofu, you will bite pepper particles, which will be spicy and not palatable.
