The last delicacy in autumn

Yesterday, I bought some purple eggplant in the supermarket. This may be the last time I ate it in autumn. I made the famous northwest dish "solanese" by looking at the ingredients. Is the name unique?

Practice:

1. Wash eggplant, cut into strips and flakes, wash green pepper, cut into seeds and shreds, wash tomato, cut into slices.

2. Heat the wok and add oil (the normal amount of oil for cooking). When the oil is warm, pour the chopped garlic and ginger into the wok and stir fry. Pour the eggplant and green pepper into the wok and stir fry.

3. Stir fry until the eggplant is soft. Pour the tomato slices into the pot and stir.

4. Put sugar, salt and soy sauce into the pot in turn, stir fry until the soup is rich (if the amount of tomato is small, add some water as appropriate), then the pot will be filled. If it's not for noodles, the soup can be dried.
