1、 How to choose abalone

1. Abalone is generally divided into dry abalone and fresh abalone. Dried abalone is more expensive. It's bigger than a small dish. And fresh abalone is shell, raised in aquarium.

2. When buying abalone, you should first check whether its shape is complete. The one with notch or back crack is the second. The one with fat bottom and protruding back and thick meat is better than the one with thin and long.

3. Superior abalone is bright and glossy. If you put abalone in the light, it will appear red. Don't buy things that are dry outside and wet inside. Abalone has black spots inside. The size of abalone is calculated by the number of heads per Jin. The less the head, the bigger the abalone and the more expensive the price.

2、 How to clean abalone

The cleaning of abalone and scallop are the same as each other, because they are common seafood. First of all, it is better to buy fresh abalone and try to soak it in water for a while. Then, open the abalone shell with a knife, pick out the abalone meat from the shell, and remove the unnecessary visceral tissue. The abalone shell should be carefully removed with a knife, or the abalone shell can be cleaned directly with a brush, and then the abalone meat on the lower surface can be cleaned. After boiling, the meat and shell can be cut with a knife. Dry abalone in cold water for 48 hours. After taking it out, soak it in boiling water for one night, let it stretch naturally and return to its original state. The washing method in the back is the same.

3、 How to make abalone delicious

1. Abalone with scallion oil

Brush the abalone with a brush before and after, and wash it under the running water. Use scissors to cut out the big black mud in the middle. Cut the flower knife, pour a little wine, a few drops of white vinegar or lemon juice. Then sprinkle with ginger, garlic and a spoonful of steamed fish and soy sauce. Bring water to a boil and steam over high heat for 3 minutes. Out of the pot, sprinkle with scallion, sprinkle with oil.

2. Steamed abalone

Choose fresh abalone, take out abalone meat, and clean it. The large abalone can be sliced into slices. Wash millet pepper and celery, cut into beads, add soy sauce and cooking oil, mix well to make sauce, and add sauce evenly to abalone. Boil water, add abalone, steam about 5 minutes over medium high heat, remove from heat.

3. Braised Abalone in brown sauce

Abalone, chicken, ham, scallops, simmer on the fire for 3 hours, remove the abalone, and prepare the original soup. Cut abalone into half centimeter thick slices. Put the original abalone soup, shark fin soup and scallop soup together into a double ear pot. After boiling, add abalone slices, boil for 10 minutes, add sugar, salt, soy sauce, cooking wine and other seasonings, mix starch into thick sauce, and add a little chicken oil before leaving the pot.
