A long time ago, in fact, not long ago, that is, in the Han Dynasty more than 1800 years ago, there was a doctor of the same era with Hua Tuo called Zhang Zhongjing. Zhang Zhongjing, who wrote treatise on febrile diseases, is no stranger to all of us. He is called "doctor saint".

Although he was proficient in medical skills, he was also a good official. During the period of Jian'an, he was once an officer of Changsha Prefecture, which was equivalent to the governor and ministerial cadres of Hunan Province. Although he is the chief, Zhang Zhongjing is keen on treating the common people. His yamen has even become a temporary hospital because there are too many people coming to ask for a doctor! This is the first person in ancient and modern times!

At the age of returning home, he set out to return to his hometown Nanyang. It was winter at that time. The White River in my hometown was covered with thick ice. The north wind was like a knife cutting on my face. Zhang Zhongjing saw many hungry and cold poor people shivering in the wind, and some people's ears were even frostbitten!

What should I do?

He couldn't sleep for a few days when he got home, and finally came up with a plan.

The next day he set up a shed in the open space of Dongguan, Nanyang, and set fire to the pot. He will give up medicine to these poor people.

This is a very special 'medicine': use bread to wrap the stuffing made of mutton, pepper and some strange herbs into the shape of ears, and then boil it in hot water.

The scalding 'ears' immediately seem to have a' Fairy Spirit 'flowing into the body. The common people are enjoying themselves and their frostbite is getting better.

This kind of medicine with the shape of 'ears' is called' jiao'er '. Later, the folk imitated Zhang Zhongjing, and after continuous improvement and upgrading, it became the "dumpling" we eat today.

Because of the special pronunciation of "Jiaozi", people now give it the connotation of "Jiaozi".

In fact, it doesn't have so much meaning. As the saying goes, although it's normal for people to eat, sometimes they need some grand reasons. Otherwise, they are always uneasy. Now, as Mr. Qian Zhongshu said, eating has deviated from the 'nominal thing', because in front of the hot food, people also want to have family or friends, as for what they eat, it seems that it is not very important for them.
