What's the difference between raw tea and cooked tea? Advantages and disadvantages of Pu'er tea

Pu'er tea is also one of the top ten famous teas in China. In winter, many people like to drink tea for health preservation. Drinking tea can cultivate one's health. It's the favorite of many health preservation experts. Do you like to drink Pu'er tea? What's the difference between raw and cooked tea?

The difference between raw and cooked Pu'er tea

The difference between Pu'er raw tea and cooked tea is that they have different fermentation process. Raw tea is a kind of traditional tea making method in history, which is completely transformed by nature without going through the process of "wodui". Mature tea refers to the rapid fermentation of Maocha through "wodui" and wet ripening, which can promote the non enzymatic automatic oxidation of polyphenols, transform them into tea containing substances, reduce the bitter taste, make the taste mellow, eliminate the green odor and shorten the aging stage.

1, raw tea

Raw tea of Pu'er tea is a kind of pressed tea made from fresh leaves of Yunnan big leaf tea plants which grow in accordance with the environmental conditions of the producing area of Pu'er tea, and then through the steps of killing green, rolling, sun drying, steaming and forming. Green cake, also known as raw cake, is a relatively traditional processing technology. The tea in that year was directly pressed into cake without artificial fermentation. It is naturally fermented by the passage of time and years. Generally, the tea from 5 to 10 years is good to drink. The appearance of raw tea is dark green, the aroma is more fragrant and the taste is stronger than that of cooked tea. The soup is golden yellow, transparent, and the raw cake is full of domineering power. It has the effect of oil scraping. It is not recommended to drink before meals.

2, cooked tea

Ripe tea is a kind of loose tea or pressed tea, which is made of Yunnan big leaf suntan green tea that meets the environmental conditions of Pu'er tea producing area, after special treatment and fermentation. The cooked cake can be drunk directly after lying in heaps and moderate fermentation. The tea cake is dark black, the soup color is reddish brown, the soup color is relatively red and bright, with heat clearing, heat relieving, detoxification and defecation.

Advantages and disadvantages of Pu'er raw tea and cooked tea

The advantages and disadvantages of Pu'er tea raw tea and cooked tea 1. Raw tea: fresh tea is picked and green, and then made into raw materials. The raw materials are screened and classified into grades. Then, they are steamed and pressed at high temperature to make various shapes, and stored in a natural way, without pile fermentation, they are raw tea. Raw tea is strong and exciting. Fresh or aged tea has strong bitterness and astringency. The soup is light or yellow green, and the tea is cold and strong, which is easy to hurt the stomach. It's not suitable to drink immediately, especially for tea friends with bad stomach. The natural ripening process of raw tea is rather slow. Depending on the environmental conditions, it will take at least ten years. The longer the time is, the more complete the enzymatic and non enzymatic oxidation of polyphenols in tea is, the more mellow and stable the aging fragrance is, but the charm is lively and vivid. This activity is called "tea gas" by tea people.

(1) Advantages of cooked tea: 1. Health effect. Scientific research shows that the health effect of Pu'er tea is better than that of raw tea. Experts have their own reasons for what's better. One of the more credible ones I think is that after fermentation, Pu'er tea has produced more beneficial bacteria groups that are not named. It is these bacteria groups that make the health effect of cooked tea greater than that of raw tea. It is generally believed that Pu'er tea contains slightly higher tea polyphenols than other teas, and tea polyphenols are healthy and beneficial substances. After the fermentation of mature tea, tea polyphenols decrease, but more beneficial to health? We do not discuss more scientific issues, we only analyze them according to the results. Pu'er tea is a healthy tea, and the health effect of Pu'er tea is higher than that of raw tea. Therefore, people who want to drink Pu'er tea to lose weight (reduce blood pressure, blood fat, blood sugar, anti-cancer, anti radiation, anti-aging, sober up, etc.) should first choose the cooked tea. For tea production enterprises, if a tea product is positioned to provide health functions, then the corresponding tea is also cooked. 2. The taste is mellow. The second advantage of ripe tea is its mellow taste. On this point, there is controversy. Everyone's taste is not the same, and the conclusion is not the same. Compared with the raw tea of Pu'er tea, the prepared tea is relatively mild. Many people regard it as the place where the prepared tea is superior to the raw tea, but some people think it is the place where the prepared tea is inferior to the raw tea.

(2) Disadvantages of cooked tea: 1. Trouble in brewing. Pu'er tea is a troublesome tea, not only related to the pressing process, but also related to the raw materials of Pu'er tea. Pressed tea is more troublesome when tasting, which is a problem of both raw and cooked tea. But the reason why the tea is more troublesome is that when it is brewed carelessly, it will make the soup thick like soy sauce and unable to swallow. In addition, cooked tea requires more tools than raw tea. 2. The taste is not good. As mentioned above, some people think that the taste of cooked tea is good, others think it is not good. Let's see what kind of people think it is not good. The general consumer's feeling of tea is brought by green tea. Without the taste range of green tea, it will be considered non tea. And Pu'er tea, to green tea standards to measure, is non tea. Therefore, people who are used to drinking green tea usually have an unnatural feeling after drinking mature tea. Another kind of person thinks that the cooked tea is too light and the tea flavor is insufficient. 3. Health and safety. The health problem is one of the most criticized places of Pu'er tea, because the fermentation of cooked tea is not as simple as the production of raw tea, the whole process is complex, and the control of health has been criticized by consumers and competitors. Of course, the current Pu'er tea enterprises have basically passed the QS quality standard, and the health problem has been solved, but in some consumers' psychology, it still leaves a shadow.

(3) Advantages of raw tea: 1. It is more like tea. This sounds awkward, but in China where green tea is the main consumption, the taste system that consumers adapt to is created by green tea, while raw Pu'er tea is not different from green tea. (scholars argue that raw Pu'er tea is green tea). When consumers drink raw tea, they generally have the feeling of "drinking tea". And green tea doesn't provide that feeling. 2. Tasting and drinking are relatively simple. Like drinking green tea, raw tea can be directly put into a cup and drunk. 3. Raw tea can be stored for a long time. This point, for ordinary consumers, does not mean much.

(4) Disadvantages of raw tea: 1. The taste is astringent. For most people, Pu'er tea is processed directly from sun dried green tea. In addition, Pu'er tea has a high content of polyphenols, which makes it difficult to swallow due to its lack of fragrance. 2. The health effect is not as good as tea. Through the above materials, we found that both raw and cooked tea have its advantages and disadvantages. Therefore, it can not be said that Pu'er tea is better to drink cooked tea or raw tea.
