1. Fish, meat and bean products - be careful of poisonous microorganisms

Fish, meat and bean products only have the problem of microbial reproduction, and the problem of nitrite basically does not need to be considered.

Fish, meat and bean products are more prone to corruption. Their common problem is the possibility of breeding dangerous pathogens, such as the dreaded Clostridium botulinum. The bacteria can produce the world's first toxin, botulinum toxin, 10000 times more toxic than potassium cyanide. The toxin can be destroyed by heating above 100 ℃ for several minutes, but it is very dangerous without heat penetration.

2. Vegetables - be careful of nitrite

It is often said that harmful substances may be produced overnight, in fact, vegetables. Because of the high level of nitrite in vegetables, it may be gradually transformed into toxic nitrite due to the activity of bacteria during storage.

3. Thoroughly heat

It's OK to put the leftovers in the second meal, but be sure to heat them thoroughly. The so-called thorough heating means that the whole dish is heated to 100 ℃ and kept boiling for more than 3 minutes.

Meat heating: if the meat is relatively large, it must be boiled and steamed for a long time, or the meat should be chopped and reheated.

Microwave is a good way to heat leftover food. It can make the inside of food fully heated. But in the family, it is often difficult to control the time of microwave heating, and it is easy to cause food splashing into the microwave oven. Consider using microwave oven to heat food for a minute or two, so that the internal temperature of the food rises, and then use the pot to heat it, or put the steamer on to steam, it is easier to heat through. Heating of bean products: compared with meat, bean products are more prone to corruption, so you should pay more attention to heating. If you know that you can't finish your second meal, heat only half of it and put the rest back in the refrigerator.
