Do you need to marinate your steak at home? How to marinate the steak in advance?

Steak is a kind of Western food that we all like, but it's very troublesome to eat out, so it's also very good to make steak at home. Before the steak is fried, it needs to be salted in advance, so how can the steak be salted in advance?

The thickness is kept at 2.5-4cm, and I'm usually 3cm. Don't be like the supermarket, one piece is only 1cm, 1.5cm thick, and the one that is fried will be fully cooked, and the interior won't be juicy at all. Moreover, put the frozen steak in the refrigerator for 10 hours, which is called natural deicing. Then put the steak in the room temperature for 1 hour, let the central temperature rise. Never fry a steak when it's frozen, never wash it, never soak it in water.

Then, it can be divided into two kinds: salted and unshelved.

If it's not salted, dry the surface with kitchen paper, and sprinkle enough salt and black pepper on the surface. Use coarse sea salt or rock salt. Black pepper needs to be ground in granules. Salt should be sprinkled more and more unevenly. Then pour some olive oil and spread it evenly. So you can wait for the pot.

Marinate. Sprinkle the steak with black pepper, two fresh rosemary sticks, 2-3 crushed garlic slices, and some olive oil. Apply all four seasonings to the surface of the steak for a few times, then leave for 30-60 minutes at room temperature. Put salt before you put it in the pot.

Remember, salt can't be put early. Steak doesn't need to be marinated like Chinese people. If salt is put too early, the water will come out and the steak will be very dry! Then, start to burn. The pot must be very hot first. Fire. When I feel hot and dry, I have steak before oil, so I can directly put it into the pot. If you use a pan, turn it over once in 25 seconds. If you use a gridled pan, turn it over as little as possible for the pattern.

If you marinate the steak, fry the garlic and rosemary in 3 minutes and then put them in the pot. Generally, 3cm thick steak can be cooked in 5 minutes after frying for 10-12 minutes. The center temperature is 55 degrees. 65 degrees.

Put a piece of butter down and color it before you leave the pot. Butter must be put in the later stage. If it is put early, it will turn black and bitter.

Finally, it needs to be left standing after leaving the pot. Let the steak rest for 5-10 minutes. Don't cut it. In this way, the juice will return to the cells, and it will not flow out all the blood.

Sprinkle lemon juice on the steak. Just fine. Reliable steak will not use black pepper sauce. This sauce is too strong for customers. It is usually made by domestic steak houses to cover up the bad taste of junk steak.

The best three partners of steak are black pepper, salt and lemon juice.
