1. Look at the mushroom color

2. Look at the packaging

If you want to buy over mature mushrooms, observe the lids, and do not fully open them, or if they do not burst and wither after opening, they are good mushrooms.

4. Touch the surface

The surface of the mushroom containing whitening agent is smooth, feels good, and feels moist; the mushroom surface without whitening agent is astringent, with mud on the surface, and feels rough and dry.

5. Smell

When buying, you should choose mushrooms with pure fragrance and no sour, smelly or moldy smell.

Tips for choosing various mushrooms

Oyster mushroom

Mushroom can be fried and rinsed, the price is the most common, but the nutrition is not bad. I like mushrooms very much, and I often buy them. The method to judge the freshness of Pleurotus ostreatus is the same as that of Lentinus edodes.

First of all, we should pay attention to the shape of Pleurotus ostreatus. Fresh Pleurotus ostreatus, the edge of the lid is wrapped inward, like a small umbrella, and the edge is neat, without any crack. At the same time, pay attention to the size. It's not good to buy a mushroom with a large cap. I prefer to buy a mushroom with a smaller cap, which is more tender and delicious. Because when the diameter of the mushroom cover is 5cm, it is the best harvest time for Pleurotus ostreatus. The export of Pleurotus ostreatus is based on this standard. Finally, the color of Pleurotus ostreatus is slightly different in summer and winter, with high temperature, fast growth and light color in summer; the growth period in winter is longer and the color is darker, but the taste and nutritional value are the same.

Flammulina velutipes

Flammulina velutipes has a smooth cover, crispy handle, fresh taste and rich nutrition. When I wash hot pot and make soup, I always choose Flammulina mushroom.

To choose Flammulina velutipes, the top of the mushroom should be hemispherical, not long open, long open will be old. Before making Flammulina velutipes, it's best to blanch it with boiling water, so it can kill bacteria.

When buying Flammulina velutipes, I will pay special attention to the color. The north is usually white, and the south is yellow. Flammulina velutipes is tough and a bit stuffed. But the Yellow fragrance is thick, the taste is tender, eats better. However, no matter which color, the fresh Flammulina mushroom generally has no variegation. Only old and bad, White Flammulina mushroom will become gray. In addition, Flammulina velutipes generally have external packaging. When you buy it, you must pay attention to the preservation period.

Dried mushrooms

Lentinus edodes are the most common and most eaten. There are two kinds of dried and fresh mushrooms. Dried shiitake mushroom is dried at about 60 ℃. It has a strong fragrance, while fresh shiitake mushroom has a softer fragrance. There is a split pattern on the mushroom cover, which is called Huagu. It is the top grade of shiitake mushroom and the most expensive. The second is the thick one, and the worst is the thin one. Considering the price and quality, I usually choose the thick one.

Fresh mushrooms should be fresh. First of all, look at the appearance. The fresh lids are more watery. The pleats are standing one by one, and will not collapse. There is no mildew, and the color should not be too deep, or it will be too much water. Then, try it with your hands, it doesn't feel sticky; pinch it, it doesn't drip. Experienced people will find that the quantity of mushrooms in the water is heavier than that in general. Finally, smell it, no acid and other peculiar smell.

How to keep mushroom

The water content of fresh mushroom can reach 90%, so the storage period is not long. It can only be preserved for about one week at normal temperature, and the time of straw mushroom is only about one day. If you want to store it at home for a long time, you must put it on the newspaper and dry it in the shade after you buy it. With less water, the possibility of microbial autogenesis will be reduced and the shelf life will be prolonged.
