Can germinated peanuts be eaten? What are the functions and effects of germinated peanuts

Sihaiwang: everyone has eaten bean sprouts and mung bean sprouts, but have you ever eaten sprouted peanuts? In recent years, some people in the market are selling sprouted peanuts, which are still more expensive than ordinary peanuts, but there are many people who buy them. The boss said "sprouted peanuts are more nutritious". Will peanuts really be more nutritious after germination? Is it poisonous?

Experts' explanation: sprouted peanuts can be eaten

Usually we say that we can't eat moldy peanuts, because the moldy peanuts will produce aflatoxin, which is extremely toxic and carcinogenic. Different from mildew, peanut does not produce toxic substances. There is no habit of eating sprouted peanuts in the south, but in the north, people in some places like to eat peanut sprouts, just like eating soybean sprouts and mung bean sprouts.

However, when eating sprouted peanuts, we must pay attention to observe whether it has mildew. Germination and mildew are produced under the condition of high water content of peanut. Although there is no causal relationship between Germination and mildew, there is still a chance for Germinated peanut to infect aflatoxin. Therefore, if it is artificially germinated peanuts, there is no problem; if it is due to mildew and germination caused by too long storage, it is absolutely not edible.

After the peanuts are moldy, there will be a layer of black or yellow brown bacterial spore hyphae on the epidermis, which has a moldy smell and is easy to identify. The skin of mildly moldy peanut is brown or yellow, the inside of the fruit is partial yellow or all yellow, and the taste will have different degrees of peculiar smell.

Nutrition analysis: germinated peanut is more nutritious

Peanut bud looks like bean sprout, white as jade, better nutrition and taste than peanut. It is found that the resveratrol content of peanut bud is 100 times higher than that of peanut, and dozens or even hundreds of times higher than that of wine. It has the functions of inhibiting cancer cells, reducing blood lipid, preventing and curing cardiovascular diseases, delaying aging, etc., with high health care value. Moreover, germination can also hydrolyze the protein in peanut into amino acids, which is conducive to human absorption; oil is converted into heat, and the fat content is greatly reduced, so people who are afraid of obesity can eat it at ease; at the same time, it is rich in vitamins, minerals such as potassium, calcium, iron, zinc and various amino acids required by human body, known as "longevity fruit bud".

Do it yourself: how peanuts sprout

First of all, select the peanut, select the new harvest of white peanut varieties, the seeds are required to be full, intact. Soak the selected peanuts in water for half a day to a day to make them fully absorb water and expand. Remove them and wash them with water for 2-3 times. Put them in the sterilized seedling tray. Cover the surface of the seedling tray with a layer of black plastic film for heat preservation and moisture preservation. Spray water for 4-5 times a day to make the buds all wet. Excess water flows out from the bottom of the tray. No water can accumulate in the tray, or the buds will rot. During the growth of peanut bud, it is always dark, and the black film is on the back cover of sowing. Then press a layer of wood on the bud to give the bud some pressure, which can make the bud grow fat. Generally at room temperature, one sprout can be produced in about 8 days. When the cotyledons are not fully developed, the testa is not peeled off, the hypocotyl is thick, white and tender, as thick as chopsticks, about 2cm long, and the fibrous roots occur, it is the picking period.
