Practice:

Step1: syrup making. First pour some water into the pot, add sugar and boil for 5-6min, then dissolve citric acid in a little water and add it into the sugar solution. After boiling, use slow fire to boil for about 30 minutes to make moon cake syrup, and store for 15-20 days before use.

Step 2: alkaline water. Add baking soda to the alkali powder, dissolve it with boiling water, and use it after cooling.

Step 3: leather making face. Put syrup and alkaline water on the flour, mix well, then add peanut oil, then slowly add flour, and knead into a soft dough with delicate hair. Note that the dough should be finished in 1H.

Step: 4: filling. Put all the prepared dried fruit, orange cake, sugar and wax gourd into a large bowl and mix them evenly. Finally, add the cake powder, and then knead them into a ball to form a five kernel filling. The filling is made up according to the dosage of different varieties.

Step 5: forming: the ratio of skin and filling is 1: (4-6), and the forming method is to take (2-8) - (12-24) pieces per kilogram. First, press the pie crust into flat and round flakes, then put it into the filling center, knead it and put it into a special wood mold or a heated copper mold with the product name engraved on the mold, and brush the oil inside the mold first. Lightly compact by hand, then knock the table board with wooden mold, and knock out the cake carefully. The copper mold can be demoulded after baking. Find the distance, put the green on the baking plate, and prepare to bake.

Step 6: bake: brush a layer of clear water on the surface of the green slab, bake in the oven for about 5min, the furnace temperature is 150-160 ℃, take out and brush the egg liquid after the cake surface is slightly yellow, then bake in the oven for about 15min, if the cake surface is golden yellow and the waist is ivory, it will be finished. If the furnace temperature is 200 ℃, bake for 13min; if the furnace temperature is 250 ℃, bake for 10min.
