Golden cake began in the Qing Dynasty and was originally called hawthorn cake. One day more than a hundred years ago, Empress Dowager Cixi, who was tired of delicacies, suddenly had a whim and asked to eat it. The palace people hurried to find shopkeeper Zhang, the most famous maker of hawthorn cake in the capital, to make it overnight. Due to the selection of raw materials and careful processing, the Hawthorn cake was ruddy and golden in color. Cixi loved it very much after tasting it. She not only appreciated the smooth, delicate, sour, sweet and delicious taste, but also loved the gold specially used by the royal family. Therefore, as soon as the golden mouth was opened, the Royal gift personally named it 'golden cake'. Later, the princes and nobles followed suit, so that gold cakes were in short supply for a time and became famous in Beijing.

How to make golden cake?

Raw materials: 500g red fruit, 350g white sugar, 5g osmanthus jam and 7.5G starch.

Preparation and eating process: 1. Wash the red fruit with water, put it into a copper pot, inject water, cook over fire for 10 minutes, remove the red fruit, wipe the fine Luo, remove the skin and seeds, and put it into a basin with osmanthus sauce for standby.

2. Pour 150g of water into a copper pot, add sugar, heat and bring to a boil for 15 minutes. At the same time, put the starch into another copper pot, inject 50g of water, heat and boil until the starch dissolves.

3. Pour the boiled sugar water into the basin containing red fruits, stir it in one direction while it is hot, then pour in the melted starch water, and then stir it evenly. Then pour it into a 7-minute-high rectangular iron mold, flatten it, and cover it with a thin oil paper. Cool and cut into 5-point square pieces. Code on a plate.
