Materials: 30 quail eggs

Seasonings: three cloves of garlic, one anise, one piece of cinnamon, one piece of rock sugar, two spoons of raw soy sauce, one spoonful of old soy sauce, proper amount of water.

Practice:

1. Lower the quail eggs in cold water, turn the water to medium low heat and cook for 10 minutes, turn off the heat, and cool them in supercooled water;

2. Peel the quail eggs, wash them with water and put them into the pot, add all the seasonings, and then add about 600ml of water, without quail eggs;

3. Boil the quail eggs in a big fire for 5 minutes. Remove the quail eggs from the ventilation area and dry them (or speed up the air drying with a fan). Then put them into a pot and boil them in a small fire for 5 minutes. Remove them and dry them in the ventilation area. Repeat this for 5-8 times. During this time, add some fresh smoke and water according to the situation. The color of the eggs will be deepened and the eggs will be bounced more.

Tips:

1. Don't add salt. It's enough for the taste of raw and old soy sauce to be repeatedly marinated;

2. This method can also be used to marinate eggs, but it needs more times of repeated cooking to reach q-bomb;

3. Every time the brine is taken out, it must be dried, and the eggs will boil more and more Q;

4. In the process of cooking, the marinade will be less, and water and raw soy sauce can be supplemented appropriately.
