Stewed spareribs with water chestnut

Ingredients: spareribs, water chestnut, red onion, ginger, star anise, cinnamon, prickly ash, dried pepper, rock sugar, raw soy sauce, old soy sauce, yellow rice wine

1. Wash the ribs and put dozens of prickly ash into the seasoning box (or wrapped with gauze).

2. In the pot, sit in the water, put the water into the seasoning box (pepper) and cook for about 3 minutes. Blanch the ribs until they change color.

3. Take out and drain the water. Prepare two pieces of anise, a small section of cinnamon and two pieces of dried pepper.

4. A slice of ginger with a proper amount of red onion.

5. Add a small amount of oil to the wok, stir fry the spareribs slowly over medium and low heat, and stir fry the spareribs until they are oily, then add all ingredients and stir fry them together to give the flavor.

6. Stir fry the sugar until it dissolves, add some rice wine, add a few drops of vinegar, stir evenly, add a small amount of soy sauce, stir fry and color.

7. Stir fry the spare ribs, add boiling water to two-thirds of the spare ribs, boil and simmer for 15 minutes.

8. Wash water chestnut, add in ribs and simmer for about 15 minutes, turn on high heat to collect juice.

Stir fried water chestnut with celery

Celery water chestnut, salt cooking wine, chicken starch, onion and ginger

1. Celery is washed clean, cut into diamond pieces, and fly with water chestnut (the Yellow River uses canned water chestnut).

2. Stir fry onion and ginger to taste. Add celery, water chestnut, salt, cooking wine and chicken essence. Stir for several times. Thicken with starch. Stir well.

Stir fried pork with water chestnuts

Ingredients: 350g water chestnut, 80g meat slice, 1 cucumber, oil, salt, pepper, shallot

1. Only use three cuts, first place the cucumber horizontally, then cut two parallel and oblique cuts, turn the cut cucumber upside down, and then cut it directly. The same method can also be used for other direction or cylindrical vegetables such as carrots.

2. First add salt, cooking wine and meal to the meat slices, stir well, and then marinate the meat slices for ten minutes.

3. Split the water chestnut from the middle, prepare it in two, and soak the cut water chestnut in salt water.

4. Heat the pot, add a little oil, add garlic slices and stir fry, stir fry until fragrant, then add meat slices and stir fry; when the meat slices are stir fried and discolored, add water chestnut and stir fry.

5. Stir fry for several times, add cucumber, salt and other seasonings, stir evenly, then dish, sprinkle with shallot.
