Sauce ginger

Ingredients: 1000g ginger, 600g chopped pepper sauce, 8 tablespoons sugar, 1 teaspoon sesame oil

Practice:

1. When the ginger is bought, do not wash the mud first, and spread the soil in a place with ventilation but less than the sun. It will take about 4-6 days for the ginger to dry naturally until the water evaporates and the skin is wrinkled;

2. Prepare a large sealing box without water and oil in advance, after the ginger is fully air dried, wash the ginger, cut it into thick and even slices, and then dry the surface water;

3. Pour the dried ginger slices into the sealed box, add the chopped pepper sauce and 8 tablespoons of white sugar, use the chopsticks without water or oil or spoon to stir evenly, seal well, refrigerate in the refrigerator for 3-4 days, and then serve;

4. You can also prepare several bottles that are washed and dried without oil or water, put the mixed ginger and sauce into the bottles, compact them, cover them tightly, and place them at room temperature for a week, so as to seal the naturally fermented ginger and taste more sweet and crispy;

5. When eating, use chopsticks without water or oil to take as much as you need, pour a little sesame oil on the table, and put the rest into the refrigerator for sealing.

Ingredients: ginger, salt, sugar, rice vinegar, sesame oil.
