White gourd and kelp soup

Materials: one yuan and one jin of wax gourd, and two yuan of kelp, which is enough for several people

Step 1: peel and cut the wax gourd and wash it.

Step 2: soak kelp in water for 40 minutes. This kind of kelp is knotted. It's sold here in Nanjing. If it's the kind of sea belt, I don't need to change my knife if I come back to soak it and cut it into small pieces for use.

Step 3: heat the oil in the pan and stir fry the wax gourd and kelp for 2 minutes.

Stewed spareribs with kelp

Materials: proper amount of dried kelp, 250g spareribs, 3 cloves of garlic, 4 pieces of ginger, 1 piece of fennel, 8 pieces of prickly ash, 1-2 pieces of dried pepper, raw soy sauce, old soy sauce, cooking wine, salt and sugar

1. Soak the dried kelp 3 hours in advance, wash it, tear it or cut it into pieces about the size of the spareribs.

2. Blanch the ribs, wash and drain.

3. Heat the oil in the pot for about 6 minutes. Stir fry the ribs until the surface is evenly coated with oil, golden yellow. Add cooking wine, and stir for a while.

4. Add hot water into the pot to submerge the ribs. Add ginger, garlic, fennel, pepper, dried pepper, boil over high heat, turn to medium low heat and simmer for 1 to 1.5 hours, until ribs are tender.

5. Kelp blanching, deodorization.

6. Until the ribs are crisp and soft, add in the raw, old and kelp, boil in high heat, turn to medium low heat and continue to stew for about 20 minutes, until the ribs are evenly colored and tasty inside and outside.

7. Add salt and sugar to stew for 10 minutes, turn the heat to collect the juice.

Fried seaweed silk

Materials: the green emperor bag kelp bought by the supermarket, take half of it and put it in the basin to soak in cold water,

Seasoning: onion, ginger, garlic powder, salt, sesame oil, cooking wine, vinegar.
