For Yibin, in fact, there is no deep impression. Today, I accidentally found that there are noodles with such strange names in the world. Among the many noodles in Yibin, the most famous is Yibin burning noodles. This kind of noodles with a strange name, because it's dry and refreshing, heavy oil and no water, so it's said that it can be ignited, and the burning noodles come from it.

Material Science:

Half a catty of water leaf for burning noodles, half a catty of alkaline noodles and one portion of spice oil Minced sesame oil, cooked spicy oil, lard (optional), Yibin sprouts, soy sauce (Jinping soy sauce is better), vinegar (SIPO vinegar is better), peanut, sesame, scallion, salt

Steps:

1. Spice oil boiling. Heat the rapeseed oil to white smoke in the pot, then turn off the heat to cool down. Add onion, ginger, garlic, bitter onion, walnut, and fry it slightly over low heat. Then add the remaining dry spices, and fry it in low heat to make the spices withered and yellow. If you have enough time, the oil temperature should be controlled in the early 100 degrees, the frying time should be a little longer, the pepper and Chinese prickly ash should be added at the end, the oil temperature in a hurry should be controlled in 120-30 degrees, the fragrance of the spices should be fried, and the frying should be dry, not burnt.

2. Filter the fried spice oil and set it aside. The fried walnuts can be picked out for another use.

3. Take some fried peanuts (I use ready-made, can be self-made) and just fried walnuts with pounding (can be chopped or rolling with a rolling pin) spare;

4. Cook noodles. Put more water in the pot, boil over high heat, sprinkle some salt, put in the noodles, and turn off the heat after boiling until it is not too long;

5. Take out the noodles with a leaky spoon and repeatedly throw them to control the water content (cover the upper part of the noodles with chopsticks and shake the water content of the noodles with force);

6. In turn, add the oily spices, namely sesame oil, spice oil, chili oil, quickly mix the oil and noodles;

7. Then add soy sauce, vinegar and salt (shop here will also add MSG), also stir evenly;

8. Put the mixed noodles into the container, sprinkle sesame, peanut, walnut, chive and Yibin sprouts. For your own consumption, you can also add ingredients in the container at one time, mix well and serve.
