Dongpo cake, a special snack in Hubei Province

1. Take the egg white, add 500g clear water, salt and soda, melt it, pour the flour, and repeatedly knead until the dough does not touch hands, and then knead it into strips;

2. Add 10 dough ingredients with a weight of 150g, rub them into a round lump, and put them in a porcelain plate filled with sesame oil (100g) for 10 minutes;

3. Spread sesame oil on the chopping board, take out the good dough, roll it into a double cylinder shape from both ends to the middle according to the long square thin dough on the chopping board, pull it into about half of the long strips, then roll it into a big and a small round cake from both ends to the middle, put the big round cake on the bottom layer, stack the small round cake on it, and then immerse it in the porcelain plate filled with sesame oil, and form a cake blank about 5 minutes later;

4. Put sesame oil on the middle of the pot until it's 70% hot. Put the cake in the pot flat. While frying, use chopsticks to loosen the cake. When the cake rises, turn it over and fry again. While frying, use chopsticks to stir the center of the cake to make it loose but not spread. When it's golden yellow, take out the oil and drain it. Put it on a plate and sprinkle sugar (45g) on each cake.
