In the past two years, Juewei duck neck has been popular all over the country. All kinds of bittern are suitable for all ages, but the price is not cheap. Today, I'd like to share with you how to make Juewei food at home.

Practice:

1. Duck head is depilated and cleaned, and the seasoning is ready for use. Put ginger slices, duck head and Guangdong rice wine into the water and boil for a while, then wash away the froth on the surface with clear water.

2. Heat the oil under the pot, add the dried pepper, prickly ash, hemp pepper, ginger slices and garlic slices and stir fry. Pour in Pixian bean paste and stir fry until fragrant.

3. Then add water or high soup (6-8 bowls), put pepper, hemp pepper, star anise, cinnamon, grass fruit, licorice, Siraitia fruit, clove, fennel, Xiangye, chenpian, nutmeg and cardamom into the cloth bag and tightly bind them, and throw them into the brine soup.

4. Pour in the soy sauce and old soy sauce, sprinkle in sugar and salt, cook until the brine boils, turn the small fire and simmer for 1 hour, when the fragrance overflows, the brine will be done.

5. Then put the duck head into the brine. Cover the pot and boil over high heat for 1 hour. Let duck head soak in brine for 2-3 hours or longer after turning off the fire.
