Learn to make the original potato starch food of Tujia Nationality

This kind of delicious food that Tujia people often make is discovered by accident. I found it when I searched for the usage of some leftover rice. Tujia people mixed cooked rice and potato starch evenly and then made it. I asked many of my friends who ate it and said that it was delicious fried potato flour. When I heard that I was greedy, I started to make it. The detailed steps are as follows.

1. Add a spoonful of cooked rice to potato starch and mix well. Add ginger, garlic, salt and scallion. Add some water to mix. The ratio of starch and water is 1:4.

2. Heat the canola oil in the pot, pour in the mixed starch, and stir with a spoon until it solidifies.

3. Put the solidified potato flour on the cutting board to cool, and cut it into small pieces.

4. Finally, fry small pieces of potato flour in a pot until both sides are yellowish.
