Special pig blood enema: cool or hot

In the past, pig blood enema was a famous snack in Shanxi Province. It was greatly appreciated by Emperor Guangxu and Empress Dowager Xi. It can be stir fried or cold mixed.

Practice:

1. Three pieces of pig blood enema, cut into long strips.

2. Put the dipper on the fire, put 40 grams of brine oil (i.e. the soup oil of marinated meat), heat the oil, put in a little green onion and 100 grams of mung bean sprouts, add some soy sauce and salt, stir fry slightly

3. Pour the pig's blood enema into the ladle, cover it and simmer. Add a little vinegar and garlic juice, turn the ladle over and fry it. Put it into the bowl.

Cold mixing method

Practice:

1. Place the enema in a bowl and cut it into diamond shaped pieces (or strips) with a knife. Pour the brine into the enema

2. Mix mustard juice, sesame paste, garlic puree, oil chilli (hot pepper noodles with a splash of rolling oil) and vinegar and other spices.

3. Use the sharpened bamboo chopsticks to tie up the pig blood enema block and dip it into the brine soup.
