Simple steaming of Song Meiling's favorite red bean Muffin

This kind of red bean muffin is deeply loved by Song Meiling, which can be said to be crazy and popular in Taiwan. In the past, the red bean muffin in Yuanshan Hotel was only made for Song Meiling alone, and no one else could taste it. Since the death of Song Meiling in 2003, Yuanshan Hotel has decided to supply a limited amount of red bean muffins every day since December 16 to mark the memory of Madame Jiang.

Practice:

1. Wash the red beans and put them into the pot. Add water and boil for about 15 minutes, then turn off the heat.

2. Weigh 200 grams of red bean water (do not use red bean). Take a large bowl, and pour the rice flour, glutinous rice flour and soft white sugar into it.

3. Add a small amount of dried red bean water for many times, and knead it with hands until it is loose.

4. Sift the loose pastry powder twice (press the pastry powder continuously with the help of hand).

5. Sift to a fine powder shape (take 1 / 3 cake powder and put it in another bowl, add honey red beans and mix well, it is red bean cake powder).

6. Take a steamer, brush a thin layer of cooking oil with a brush, and put a piece of steamer paper on it.

7. Sprinkle in a layer of pastry, then put in a layer of red bean pastry. Finally, sprinkle a layer of cake powder, and use a scraper to smooth the surface.

8. Sprinkle a layer of red beans and cut into filiform preserves (try to choose preserves of different colors and cut into filigree).

9. Cover with bamboo cover and put it into a steamer. Steam for 30 minutes until the edge of the muffin is separated from the steamer.
