Stewed tea, eggs and soup

The famous stewed eggs in Confucius Temple are not the ones we see at the roadside stall. They are boiled and then soaked in soy sauce. Today, we share the traditional way of making them with you.

Practice:

1. Boil the eggs for 8 minutes, then scoop up and crack the shell.

2. Add 1500 ml of clear water, add eggs, red tea, soy sauce, star anise, salt, rock sugar and spiced powder to boil in the pot.

3. Marinate for 90 minutes.
