1. In a small bowl, mix the lemon peel and the lemon juice with salad oil.

2. Put the whole egg liquid and sugar into a clean, oil-free and water-free basin.

3. Use an electric mixer (you can also use a hand beater, but it will be very tired) to stir slowly until the sugar and egg mixture are fully integrated.

4. Whisk quickly until the batter changes from yellow to milky white.

7. Sift the flour into the egg paste, put in the lemon juice in step 1, and mix evenly with the hand beater.

8. Use a rubber scraper to scrape and mix the bottom and all around the basin.

9. Scrape the batter into the oiled small cake mold. I use a scraper to scrape it up and then drip it into the mold. It's better to squeeze the batter into the mold with a flower mounting bag (I think it's too much trouble to use a scraper directly). There is no way to cut a small hole at the bottom with a plastic belt.

10. To fill 80%, put into a boiling steamer and steam over medium heat for 8 minutes.

11. Of course, it's hard to install a small mold like this. You can spread oil paper on a large cake mold or a small stainless steel basin (it must be the same height as the baking mold), and directly scrape the batter into it, but it will take 20 minutes to steam.
