Specific operation:

1. Wash the tenderloin with clean water and remove the fascia;

2. First cut the meat into large pieces, about half a centimeter thick;

3. Change the sliced meat into silk. After cutting, it should be slightly thicker than chopsticks;

4. Marinate the meat with 4G cooking wine, 2G salt, 3ml soy sauce and 3G starch for about 20 minutes;

5. Roll starch on the cured meat;

6. Heat the oil in the pan until it is 60 or 70% hot. Deep fry the sirloin one by one until golden;

7. Squeeze orange juice and set aside;

8. Pour orange juice, vinegar 28g, sugar 21g, cooking wine 7g and starch 2G into a bowl to make the juice;

9. Heat the frying pan, pour in the mixed bowl juice, bring to a boil over high fire, pour in a little sesame oil, then pour in the sirloin and stir fry evenly.
