150 grams of tenderloin, 1 egg white, 10 grams of starch, 8 grams of soy sauce, 3 grams of cooking wine, a little salt, 2 grams of beef powder or chicken essence, 150 grams of Douhua / nenzhi tofu, 10 grams of scallion, ginger and garlic, 5 grams of shallot, 10 grams of spicy Douban sauce, 10 grams of cooking wine, 3 grams of soy sauce, 5 grams of sugar, a little salt, enough soup or water, 5 grams of pepper powder and right amount of chili powder.

Method:

1. Pour egg white and starch into a bowl.

2. Continue to add soy sauce, cooking wine, salt, beef powder or chicken essence, and stir all the ingredients in the bowl in one direction with chopsticks.

3. Soak the tenderloin in water for 20 minutes to remove the blood. Cut it into 2-3mm thick pieces.

4. Put the sliced meat in the paste prepared in step 2, and stir it in one direction by hand to make the sliced meat strong.

5. Boil a pot of water, turn to low heat after boiling, and put in the fillet.

6. When the meat is discolored, take it out and wash off the blood foam with water.

7. Cut the bean curd / tender fat tofu into large pieces half a centimeter thick and stack them in a bowl.

8. Prepare 10 grams of scallions, 10 grams of ginger and 10 grams of garlic, and 5 grams of shallots.

9. Put the bottom oil in the pot, add 10g of bean paste, stir fry the red oil, put onion slices, ginger slices, garlic slices and sugar, stir fry until fragrant. Cook with cooking wine and soy sauce.

10. Pour in plenty of stock or water (the best amount is no more than the sliced meat). Next, blanch the sliced tenderloin in step 6 and cook for 3 or 4 minutes until the soup thickens. Turn off the heat and pour the sliced meat and spicy soup into a bowl of tofu.

11. Sprinkle pepper powder and chili powder on the surface of meat slices.

12. Take another pot and pour in 15g of cooking oil. When the oil is heated to 80-90%, turn off the heat and pour it on the meat slices. Finally, sprinkle with scallion.
