2、 The mixing process of moon cake dough:

Wash the long purple skinned eggplant and scrape off the eggplant skin with a scalpel (hint 2: the best choice for eggplant is long purple skin eggplant, which has large water content and rich cellulose, and is suitable for steaming; the peeled eggplant skin should not be discarded and can be used for cooking)

7. Take a large basin, put the silk eraser on the basin, press the silk eraser with the left hand, hold the peeled eggplant in the right hand, and rub it back and forth between the pores of the silk eraser

8. Wipe the eggplant into filaments for standby (tip 3: wipe the eggplant shreds quickly, and it is better to do all the preparatory work before wiping the silk, because the eggplant is easily oxidized and blackened in the air)

14. Dip a small amount of vegetable oil with a brush, and evenly coat a layer of edible oil on the bottom and inner wall of the moon cake mold (Tip 6: the purpose of brushing edible oil in the moon cake mold is to facilitate the demoulding of moon cake)

15. Put the kneaded cylindrical dough into the mooncake mould and press it with your hand to make the dough surface smooth

16. Insert the mold upside down on the chopping board, push the mold handle down gently with your hand, and a eggplant quinoa moon cake will be made

23. Put the egg yolk in a small bowl and stir it into egg yolk liquid

24. After the moon cake is baked for 20 minutes, take out the baking plate and brush a layer of egg yolk on the surface of each moon cake evenly

25. Put the baking tray back into the middle layer of the oven, and continue to bake for 10 minutes with 180 degree fire. Take out the baked moon cake and cut it from the middle.
