Hot and sour cold noodles in early autumn

1. Marinate fresh shrimps with salt for 10 minutes, dice tomatoes, cucumber, coriander, and pepper into circles. Remove the root of soybean sprouts and set aside

2. Boil the water in the pot, boil the raw noodles in the pot until the water boils, then add half a bowl of cold water, and repeat twice until the noodles are cooked

3. Rinse the cooked noodles with cold water, immerse in ice boiling water for about 5 minutes, remove and drain

4. The boiled water of noodles can be boiled with shrimps and bean sprouts until cooked, and then immerse it in ice boiling water for cooling. Remove and drain the water

5. Mix soy sauce, vinegar, sugar, tomato sauce, lemon juice, cold boiled water (3 tbsp), chili oil, sesame oil, garlic, chili rings and coriander in a bowl and mix well to form the cold fabric juice

6. Put the noodles into a bowl, code the cooked shrimp, cucumber shreds, diced tomatoes and soybean sprouts on the surface, and then drizzle with cold noodles sauce
