Sweet hot sauce mixed with kidney flower

1. Cut the pork loin, peel off the outer membrane, remove the white fat inside, cut it into thin slices, and rinse it with flowing water repeatedly (most meat sellers are willing to handle it for you, please cut it clean when doing it).

2. Boil the water in the pot, add a little salt and rice wine, and add the kidney flower. After the water is rolled again, remove the kidney flower and immerse it in the ice water (the ice water is slightly soaked to make the taste more crisp).

3. After 5 minutes, take out the kidney flower, drain the water, mix in the right amount of sweet and hot sauce, salt, sesame oil and chopped scallion.
