1. Add salt and a little sugar to minced meat, mix well and set aside.
2. Peel and chop tomatoes.
3. Cut the eggplant into strips.
4. Put oil in a hot pot, add garlic, add eggplant, add salt, stir fry until eggplant becomes soft, then scoop out for use.
5. Add a little oil into the pot, add the minced meat, stir fry until the meat changes color and oil.
6. Add tomato and stir fry well.
7. Add eggplant in step 4 and stir fry well.
8. Add oyster sauce, soy sauce and sugar, stir fry well.
9. Finally put in the scallion, stir fry well.
