1. Chop up the shallots, carrots and nine layer pagodas
2. Break the eggs into liquid and add a little soy sauce
3. Heat the pan with a little oil
4. Mix the carrots, the nine layer tower and the egg mixture
5. In a pan, turn the omelette upside down when it's brown, and use a spatula to break it into pieces
6. Sprinkle in shallot, stir fry evenly, then out of the pot.
