The way of crisp but not greasy braised pork with oil

How to make oil walking meat? Oil walking meat is very similar to the double cooked meat we often eat. It is a famous dish in Zhejiang Province. The process of making oil walking meat is divided into two steps.

Practice:

1. Cut the streaky pork into large pieces and put them into the pot with water.

2. Bring to a boil over a high heat. Cook for about 30 minutes over a low heat until you can pierce the skin with a small stick of chopsticks.

3. Take out the water (don't pour out the broth in the pot, you can put the tofu, Haimi and green vegetables into the tofu soup, which tastes very delicious).

4. Take another pot and put in vegetable oil until the oil is smoky.

5. Put the cooked streaky pork into the oil pan and fry until the golden skin on the meat is wrinkled.

6. Soak the fried meat in warm water for 10 minutes.

7. Cut into appropriate small pieces (with skin on each piece) and braised. It's better to put some vegetables you like when braised, so that the meat and vegetable match is more healthy.

Braised pork in brown sauce

1. Heat the pot with a little vegetable oil, stir fry the pepper (a little pinch) and the star anise (1 piece), then put the onion and ginger to give the fragrance.

2. Pour in the radish and meat and stir well.

3. Pour some cooking wine and 2 kinds of soy sauce (old soy sauce and delicious) into the pot.

4. Stir fry well, then pour in hot water, not over the meat and radish (the water should be wider).

5. Put in the sugar (10 grams), bring to a boil, simmer for another 30 minutes.

6. Put in salt, turn on the heat and collect the thick soup.
