1. Boil a piece of tripe with water for 1 hour until soft, remove and cut into fine silk, then boil with about 6 cups of water and baking soda for 30 seconds until rotten, remove and wash, filter and dry the water.

2. Stir fry the tripe with 3 tbsp hot oil and season with 1 tbsp soy sauce. Remove and drain.

3. Heat the wok, stir fry red pepper and shredded bamboo shoots with 3 tbsp oil, add shredded tripe and leek, pour down the sauce, stir well with high heat.

If you don't want to eat too greasy, you'd better remove the greasy layer from the tripe, so that the fried one won't be too greasy.
