Peanut tofu in the shape of Western cheese

I heard friends talking about this peanut tofu snack when I was traveling. The raw material is mainly peanuts. It's not difficult to make tofu. It feels like eating Western-style cheese, but the main Taoist appears.

Practice:

1. Put peanuts in a container, pour water into the surface of peanuts, soak for 30 minutes. After soaking, cover the surface of the container with plastic film and heat it in the microwave oven for 3 minutes.

2. After heating, the epidermis of peanut is slightly swollen. At this time, remove the peanuts from the container and put them in the blender used in the kitchen.

3. Add 50 grams of clear water to the blender, or add a proper amount of clear water according to the instructions of the blender at home. Close the lid and mix the peanuts to make a pulp.

4. The peanut pulp stirred by the machine is sticky, and the tiny particles of peanut can be seen inside. It feels like sanding when you rub it with your fingers.

5. Pour the peanut butter directly into a clean container without filtering the peanut chips. Put it aside for use.

6. Clean cabbage core with water, put it on the chopping board, and cut it into 0.5cm wide silk. Dry the excess water on the surface with kitchen paper.

7. Clean the scallion and cut it into circles. Put cooking oil in the wok, sprinkle pepper seeds when the oil is not hot, stir fry it in hot sauce, then fish it out and throw it away, add onion rings in the wok, stir fry it to taste.

8. After the aroma of prickly ash and onion comes out, pour in the cabbage core that wipes out moisture in step 6, stir fry a few times slightly. Turn off the fire and set aside.

9. Add a stir of peanut butter in step 5 in a clean pan, when the surface of the liquid floats many peanuts.

10. There will be some peanut pulp and small particles left in the cooking cup of the blender. Don't waste them. Add about 200g of water and stir it. Return to the pot in step 9. Boil over medium heat, then turn to low heat.

11. When the peanut pulp is cooked to a uniform paste, put in step 8 and cook the cabbage core for 10 minutes.

12. Good peanut pulp viscosity is similar to corn paste. It can be eaten in a bowl or sprinkled with black sesame seeds according to personal preference, which is called "peanut tofu" by local people.
