3. Prepare a large basin to beat the egg white, because all the raw materials will be added to this basin later. It's too small to operate. Use the electric beater to beat the egg white until it's hard.

4. Prepare milk powder, oilcloth or silica gel pad for nougat shaping.

5. Water + white granulated sugar + maltose + a little salt to over 135 degrees, generally I cook to 140 degrees, about 20 minutes, the whole process of small fire!!! The previous several times of medium fire, the temperature has also been over 135 degrees, but the finished product is relatively soft, not easy to cut, easy to stick, anxious to eat hot tofu ah, one must have patience. (there's a special thermometer for wood, so it's easy to use.)

6. Take the hot water in the protein basin, pour the boiled sugar solution into the protein immediately, and beat evenly with the electric egg beater. Add butter in several times and beat evenly with electric egg beater.

7. Add milk powder and mix well. If the weather is too cold and the sugar solidifies, put the basin back into hot water for operation.

8. Add peanuts and mix them evenly with a shovel or chopsticks. In this step, I directly clawed on the oilcloth. It's more convenient to knead sugar with my hands. By the way, shaping is more convenient. In the picture, the plastic is covered with a plastic film on the top in the baking tray. Later, I found that it's more convenient to knead the oilcloth or not.
