2. Wash the shrimp and drain. If using frozen shrimp, wash the ice off the surface with water and thaw at room temperature. Do not soak in water or use microwave oven to defrost.

3. Take care of the citronella. Chop the citronella into 10-15 cm long sections, then knock them apart. Although the citronella is delicious, its texture is hard and can't be imported, so it must be picked out and thrown away after cooking, so it's better to cut it longer, so it's easier to pick some.

4. Use a deep pan, preheat slightly, put a little vegetable oil in it, and then put a tablespoon of Thai red curry sauce. Because this kind of sauce is spicy, don't put it down too much at the beginning.

5. Then stir fry constantly. When the fragrance is out, put eggplant and mushroom into the stir fry, then pour in coconut milk, put in citronella, stir it. At this time, you may feel that there is too little liquid in the pot. Don't rush to add water, because there will be a lot of water oozing out after the vegetables are heated. If you add water rashly, the taste of the vegetables will be light.

6. When the eggplant in the pot becomes soft and tastes completely tasteless, it means that it has been cooked in place. Then taste the taste of the soup. If you feel a little light and not spicy enough, you can add some curry sauce.

7. Put the shrimp in the pot, stir gently, and let the shrimp heat evenly. When the whole shrimp turns from translucent to white, it means that it has been cooked in place. Then pour some fish sauce for seasoning, and of course, don't forget to squeeze in the lemon juice.
