Lemonade curd: a must-have night snack

I'm very lazy. I want to eat a non fattening night snack and don't want to make it long. I'll make it on Sunday. This lemon curd is enough for me to eat for a week and share with you.

Practice:

1. Add 1 to 2 inches of water to a deep saucepan and heat over high heat until it is ready to boil. Set a small fire to keep the water boiling. Grated lemon peel, salt free butter cut into six pieces at room temperature

2. Mix all ingredients except butter in a large bowl. Heat the large bowl in water and continue to stir until the yolk is hard and the blender can be drawn when lifted, about 7 to 10 minutes

3. Remove the large bowl from the water, mix the butter in, one piece at a time, and wait until the previous piece melts completely and mixes well before adding the next piece.

4. Place a fine eye filter over the bowl to filter the curd. Press down on the solids and scrape the curd toward the bottom of the filter. Remove the solids remaining at the bottom of the filter.
