Simple and delicious dish: diced eggplant with Abalone Sauce

In summer, I like to eat eggplant. There are many ways to make eggplant, but I only cook eggplant. I'll introduce a new way to make eggplant. It's simple and delicious. It's only 4 steps to make eggplant in abalone sauce.

1. Wash the eggplant, remove the stalk, cut into small squares of about two centimeters, put the cut eggplant into a light salt water basin and soak for 5-10 minutes, and remove for standby;

2. Cut green peppers into pieces the size of eggplant, and slice garlic for use;

3. Put a spoonful of oil into the non stick pot, heat it, put in the eggplant soaked in salted water, stir in medium and small heat until the eggplant becomes soft, and then put it out for standby;

4. Refill the original pan with a spoonful of oil, stir fry the garlic slices, stir fry the green peppers, stir fry the fried eggplant, turn off the heat, stir in a spoonful of abalone juice, stir well at the remaining temperature.

Tips:

1. Eggplant will not eat a lot of oil after being soaked in light salt water and then fried;

2. If you have a heavy mouth, you can add a little salt when you fry eggplant and green peppers at the end. I didn't adjust it. Just turn off the fire and season it with abalone sauce, because abalone sauce already has salty and fresh taste.
