1. For each 500g dry squid, add 15g sesame oil and a little alkali, and soak in water until soft.

2. Take 500g of soda, 200g of lime and 4.5kg of boiling water, mix them and add 4.5kg of cold water to mix them. After the water is cooled, the slag is removed to form a 5% solution. Take out the dried squid soaked in cold water for 3 hours, put it in the cooked alkali solution for another 3 hours, then it will swell and grow well. Take it out and rinse it repeatedly in cold water to remove the alkali smell.

3. To make squid, mix 500g soda with 10kg cold water and stir it into 5% soda solution. Then add 20-50% water according to the age of squid. The foaming process is the same as that of cooked soda method.
