A friend asked me how to observe the color and taste of red wine. Don't laugh. Although this is not a proper word, we really need to evaluate the quality of a red wine from the aspects of color, aroma and taste. The knowledge is not small.

Look at the color, luster and clarity of the wine.

Hold the handle of the glass or hold the bottom of the glass, tilt 45 degrees, put a piece of white paper under the glass, and observe the color of the wine carefully with the help of natural light. At the same time, observe the color of a round part in the center of the wine, and pay attention to the reflection. There is a crescent shaped part on the edge, which is called rim. We can find some clues about the age, aging and alcohol degree of the wine. The nearly colorless and transparent edge changes due to the surface tension of alcohol volatilization. The higher the degree of alcohol, the higher the degree of alcohol.

The color of the wine should be clear and glossy, not turbid. Depending on the difference of the color of the wine, the maturity of the wine can be judged. It is best to observe the color of the wine in the sunlight and in front of the white background as far as possible. Generally, the older the red wine is, the lighter the color is, and the younger the color is, the darker the color is.

Smell the fragrance

Put your nose close to the mouth of the cup and smell the wine in a still state. Then rotate the wine cup slightly to make the wine in the cup ripple gently, so as to make the wine contact with the air (especially the oxygen in the air), so as to release the aroma of the wine. Then close the cup to the nose, inhale again, smell the wine aroma. Compared with the first smell, the first smell is more direct and light, and the second smell is more rich, strong and complex. When smelling the wine, you should put your nose into the cup and smell it briefly, not long and deep. Smell whether the wine is fragrant, whether it has pure fruit aroma, or whether it has coarse, closed, light, fresh, sour, sweet, rich, greasy, stimulating, strong or tempting shyness.

Lift the glass, place the mouth between your lips, and press your lower lip. Lean your head back slightly and inhale the wine into your mouth. Wine is about sipping slowly. Let the wine turn over in the mouth, play with the tongue repeatedly, let the wine melt at the tip of the tongue, or wrap the wine with the tip of the tongue, and then rotate it in the mouth. You can also 'chew', so that every taste bud can be fully opened, and you can feel its taste and sweetness.

Specifically, the tongue should fully taste the three main flavors: the sweet taste on the tip of the tongue, the sour taste on both sides, and the bitter taste on the base of the tongue; let the whole oral cavity, maxilla and mandible fully contact with the liquor to feel whether the liquor is sour, sweet, bitter, light, thick and thin, balanced and coordinated or not, so as to spread the fragrance of the liquor to the whole oral cavity; you can also smile and breathe in gently. This can not only prevent wine from flowing out of the mouth, but also make wine steam into the back of the nose. Finally, at the end of the taste analysis, it is best to swallow a small amount of wine and spit out the rest. Then, use your tongue to lick your teeth and the inner surface of your mouth to identify the aftertaste. A good wine finish lasts 15-20 seconds. Generally speaking, the better the wine, the more lasting the flavor, and the richer the flavor types. Especially for some durable old wine, the aftertaste can last for a long time in the mouth.

It is worth noting that: do not hold the body of the glass when carrying the wine. The temperature of the palm of the hand will affect the taste of the wine.
