How to use yoghurt fermentation powder? The time and temperature of fermented yogurt should be well

See a friend asking how to ferment yoghurt with starter? I haven't used this method yet. Now I buy some pure milk and original yogurt directly to make it. However, since my friend has asked about this topic, I will also give you a detailed description of the method of fermented yoghurt fermented by starter and some of my usual methods.

Yoghurt with starter

1. 250 ml to 1 liter of milk (about 1-4 bags of commercially available fresh milk), or milk powder can be used to make milk. Add sugar, bring to a boil. (or without sugar). Cool to about 40 ℃. (similar to body temperature, not hot is appropriate). Pour into a suitable clean container or yoghurt container.

2. Take out a bag of starter from the refrigerator and place it at room temperature for 15 minutes to 1 hour to make it balance with the room temperature (while boiling milk can save time), tear up the small bag, pour the starter into the milk and mix well.

Note: do not stir violently and do not stir a lot of bubbles. The fermentation time is about 40 ℃ for 4-6 hours. Do not shake, shake or stir during fermentation. The fermentation was completed when the milk just solidified and a small amount of whey appeared. Like to eat sour yogurt can appropriately extend the fermentation time.

3. Take out the fermented yogurt and put it in the refrigerator for hours or overnight. It can stop the growth of lactic acid bacteria and continue to produce flavor substances, making the yoghurt more mellow and more complete.

4. Take it out of the refrigerator and stir it to serve. Before eating, you can add sugar, juice and fruit according to your taste. People who can't eat sugar can add sweetener or not. People who are afraid of cold can put yogurt at room temperature and eat it.

Note: all fermentation utensils should be clean. And boiled or scalded with boiling water. Attention must be paid to hygiene in operation.

Electric rice pot yogurt method

Raw materials: pure milk 500ml, plain yogurt 125ml

Methods:

1. Put the porcelain cup (together with the cover) and spoon in the electric rice cooker, add water and boil for 10 minutes to sterilize.

2. Take out the cup and pour in the milk (7 minutes full. If the milk is newly opened, it has been disinfected well, so it is not necessary to boil and disinfect). Heat the milk in the microwave oven until the wall of the cup is not hot.

3. Add yogurt to warm milk, stir well with a spoon and cover.

4. Power off the electric rice cooker, pour out the hot water in the pot, put the porcelain cup into the electric rice cooker, cover the electric rice pot cover with clean towel or other heat preservation materials, and ferment with the waste heat in the pot.

5. After 8-10 hours, the low sugar yogurt is ready. If it's made in the evening, you'll be able to drink delicious yogurt the next morning.

You can also use the method of microwave oven, but this electric rice cooker is my best method. You can't ferment with the heat preservation file of electric rice cooker. Because the temperature of heat preservation is too high, the electric rice cooker must be cut off when fermenting. If you make yogurt in winter, you can ferment the porcelain cup on the heat.
