Proper salt, 1 teaspoon cooking wine, 1 teaspoon pepper, 3 tablespoons Shaoxing wine, 2 teaspoons raw soy sauce, 1 teaspoon old soy sauce and 1 teaspoon vinegar.

1. When the oil is about 40% or 50% of the oil temperature, dry the marinated fish with kitchen paper and fry it in the oil pan until it is crispy, then take out the oil control,

2. When the oil pot continues to refuel to 70% or 80% of the oil temperature, fry the fish block again and color it. When the fish block is golden yellow, quickly remove the oil for control;

3. Heat another pot, add a little oil, warm up the oil, and then put the garlic, ginger, scallion, anise and cinnamon into the pot. Stir in the small and medium heat, pour in 3 tablespoons of Shaoxing wine, 2 tablespoons of raw soy sauce, 1 tablespoon of old soy sauce, add sugar and salt. Pour 1 bowl of water into the pot. After boiling in the big heat, put the fried fish into the pot, stir fry the fish and soup evenly, turn to medium heat and simmer;

4. In the process of stewing, it is necessary to turn the fish upside down in the middle of the stewing process to make the color of the fish even. When the fish is thick (about 40 minutes), pour 1 teaspoon vinegar into the pot, push it evenly, and then put it out. The prepared smoked fish can be eaten hot or cool.
